These places are not pulled from a directory. They are found slowly — down a dusty lane, through a gate left open, by a recommendation whispered over a late dinner. The collection is small on purpose: a few historic masserias, a working trulli hamlet, family estates where the door is opened by the people who own them.

For each venue we know the chef, the cellar, the rain plan, the quiet corner where the bride can breathe before the ceremony — and the airport transfer your grandmother will actually be comfortable in.
